For the purpose of this quest, a soft cheese is one that has been 'ripened'. They are left to age between four to eight weeks, and have a low moisture content, but very high fat content, and that's why they are lushiously creamy.
Bake these with rosemary sprigs, or just eat them as they come. Whatever rolls your cheese wheel.
