Semi soft cheese is the type of cheese that would leave a dent if you pushed your finger into it. These have a high moisture content and therefore while still creamy, they offer more resistance than a soft cheese that would just ooze out onto whatever surface it's on.
These cheeses tend to be mild, but dense and earthy, and can pack a pungent punch depending on how they have been treated. They're also the type you want to get involved with when you think of the word 'melt'.
