Bloomy rinds are created when the right balance between yeast and mold is struck. Cheeses with bloomy rinds have ripened from the outside in, which is why the gooey creamy center is the way that it is, bringing joy to our faces.

These cheeses get sprayed with a solution made up of edible mold spores, which use the humidity in the ripening room to grow and bloom into a soft, fuzzy rind.

Unless you see that it has separated from the cheese, has a gritty texture, or any ammonia-like taste or smell, go ahead and eat this rind!
